Vegan dinkelwheat bread with flaxseeds and sesame seeds

A couple of years ago, my mum started making her own bread at home, and honestly, I never looked back even after I moved into my own place. I still bake homemade dinkelwheat bread every week for my boyfriend and me and we both love it. It’s super easy to make and only uses very few ingredients but is full of taste. The only thing you really need to make this bread is time.

You could also easily change out any of the ingredients. Sometimes when I’m out of flaxseeds or sesame, I just add sunflower seed, pumpkin seeds, chopped up walnuts or even chopped almonds. And it always turns out great. Honestly, in nearly two years of baking, I’ve never had a single loaf turn out badly. My mum originally found the recipe on a German food blog, and while most of you probably don’t speak German, I’d still like to give credit. I absolutely love this bread and just changed up a few things to make it even better for my personal taste.

Ingredients

  • 500g dinkelwheat flour Type 1050 (This is just a stronger kind of flour than the regular kind. It just kind of stabilizes your bread. I suppose it’s pretty much the equivalent of American bread flour or high gluten flour.)
  • 1 tsp salt
  • 60g flaxseed
  • 40g sesame seeds
  • 40g fresh yeast
  • 400ml lukewarm water
  • 1tsp light brown sugar (regular white sugar works just as well)
  • some margarine for greasing the loaf pan

Directions

Crumble the fresh yeast into a small bowl, add the sugar and 75ml of lukewarm water. Whisk until everything has dissolved. Leave the bowl somewhere warm for the yeast to activate for 15 minutes.

While the yeast is activating, measure 500g of flour into a large mixing bowl, add salt, flaxseeds and sesame seeds. Stir until everything is combined.

Once the 15 minutes are over, add the yeast mixture to the flour as well as the remaining 325ml of lukewarm water. Mix or knead until combined.

Once combined, put either a lid or a clean dish towel on top of the mixing bowl and place it somewhere warm for the dough to rise for another 30 minutes.

When those 30 minutes are over, knead the dough once again and put it in a greased loaf pan. Cover the loaf pan with a clean dish towel and let the dough rise somewhere warm for another 30 minutes. Preheat your oven to 225C/430F.

When the 30 minutes are over, put the dough into the oven at 225C/430F. After 17 minutes, turn down the temperature to 195C/380F and bake for another 35 minutes.

Once the bread is done, take it out of the loaf pan and cool it on a wire rack.
